- 3 cups broccoli florets
- 1 medium zucchini, sliced into half-moons
- 1 cup mushrooms, sliced
- 2 green onions, sliced
- 1 tablespoon sesame seeds
- Salt and black pepper, to taste
Sugar-Free Teriyaki Sauce
- 1/3 cup coconut aminos or gluten-free tamari
- 2 tablespoons water or chicken broth
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 1 to 2 teaspoons monk fruit, allulose, or erythritol, optional
- 1/8 teaspoon xanthan gum, or a tiny pinch as needed
Instructions
- Whisk coconut aminos or tamari, water or broth, rice vinegar, sesame oil, garlic, ginger, and keto sweetener in a small bowl.
- Season chicken with salt and black pepper.
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until golden and cooked through.
- Remove chicken from the skillet and set aside.
- Add remaining oil, broccoli, zucchini, and mushrooms to the skillet.
- Stir fry for 4 to 6 minutes until crisp-tender.
- Return chicken to the skillet.
- Pour in the sugar-free teriyaki sauce.
- Sprinkle in a tiny pinch of xanthan gum while stirring.
- Simmer for 1 to 2 minutes until the sauce is glossy and lightly thickened.
- Top with green onions and sesame seeds.
- Serve warm with cauliflower rice, shredded cabbage, or zucchini noodles.
Notes
For a milder sauce, use coconut aminos. For a saltier, more intense sauce, use tamari. Add sweetener slowly and adjust to your preferred teriyaki flavor.
