When we talk about osteoporosis after age 60, the conversation often revolves around expensive supplements or cutting-edge medications. However, in our grandmothers' pantry hides a secret weapon that modern science is rediscovering: canned sardines (or bluefish preserves). Yes, that humble, often underrated can is probably the most underused and inexpensive food to keep our bones strong.
Why sardines? In addition to calcium, which is essential, aging bones need a structure to hold them together: collagen. Sardines, consumed whole (with bones included), offer us a perfect dose of bioavailable calcium, phosphorus and, fundamentally, natural vitamin D. This vitamin is the key that allows calcium to be properly absorbed in the intestine and accumulate in the bones. A small can of sardines in olive oil provides more than 30% of the recommended daily intake of calcium and almost 100% of vitamin D, all for less than 2 euros. It is such a peculiar cocktail that not even enriched milk can match it.
But how can I enjoy them without getting bored? Here I present three ingenious recipes for exquisite palates and effortless jaws (we will cut the thorns so that they are imperceptible).
1. Creamy sardine pâté (Toast base)
Drain a can of sardines in olive oil and cook them in a bowl (with bones included). Add 2 tablespoons of light cream cheese, the juice of half a lemon, a clove of roasted garlic (to soften the flavor) and a handful of fresh parsley. Blend with an electric mixer until you obtain a homogeneous paste. Use: Spread on toasted whole wheat bread. It is ideal for breakfasts or light dinners. Lemon enhances the absorption of calcium and garlic provides anti-inflammatory properties.
2. Romesco Sardine Sauce (with vegetables)
Take the contents of the can (with the oil) and mix it with 50 grams of toasted almonds, a dried tomato and a tablespoon of sherry vinegar. Grate everything. Usage: Use this sauce to accompany steamed broccoli or buckwheat asparagus. The combination of vitamin K from vegetables with calcium from sardines creates a perfect synergy against bone density loss.
3. Quick Mediterranean Salad
Mash the sardines with a fork (without bones) and mix them with chopped tomatoes, red onion, black olives and a hard-boiled egg. Season with extra virgin olive oil.
