Instructions
- Line a baking sheet or large plate with parchment paper.
- In a large bowl, combine shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and salt.
- Stir until the mixture is sticky and fully combined.
- Chill the mixture for 10 to 15 minutes if it feels too soft.
- Scoop into small mounds using a cookie scoop or spoon.
- Press each mound gently so it holds together.
- Place the macaroons on the parchment-lined tray.
- Refrigerate for 30 minutes, or until firm.
- If using chocolate, melt chocolate chips with coconut oil until smooth.
