Ingredients
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup tomato sauce
- 1 cup vegetable broth
- 1 medium sweet potato, peeled and diced small
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup corn, fresh, frozen, or canned
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1 tablespoon lime juice
- Optional toppings: avocado, cilantro, Greek yogurt, shredded cheese, tortilla chips, green onions, jalapeños
Instructions
- Add black beans, kidney beans, pinto beans, diced tomatoes, tomato sauce, vegetable broth, sweet potato, bell peppers, corn, onion, garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper to the slow cooker.
- Stir until everything is well combined.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Check that the sweet potato is tender.
- Mash a small scoop of beans and sweet potatoes against the side of the slow cooker for a thicker chili.
- Stir in lime juice.
- Taste and adjust seasoning if needed.
- Serve warm with avocado, cilantro, Greek yogurt, cheese, tortilla chips, or green onions.
Notes
For a spicier chili, add cayenne, jalapeños, or red pepper flakes. For a thicker chili, reduce the broth slightly or mash more beans near the end.
