Ingredients
- 2 cans black beans, drained and rinsed
- 1 tablespoon olive oil
- 1/2 small onion, diced
- 2 garlic cloves, minced
- 1 cup salsa or diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- Pinch of cayenne pepper, optional
- 1 tablespoon lime juice
- 2 tablespoons chopped cilantro, optional
- Optional toppings: avocado, Greek yogurt, shredded cheese, tortilla chips, jalapeños, green onions, lime wedges
Instructions
- Drain and rinse black beans.
- Heat olive oil in a pot over medium heat.
- Add onion and cook for 2 to 3 minutes.
- Add garlic and stir for 30 seconds.
- Add cumin, chili powder, smoked paprika, salt, black pepper, and cayenne if using.
- Stir in black beans, salsa or diced tomatoes, and vegetable broth.
- Simmer for 8 to 10 minutes.
- Blend part of the soup with an immersion blender until slightly creamy.
- Stir in lime juice and cilantro.
- Taste and adjust seasoning.
