Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 cup quinoa, rinsed and drained
  • 1 can black beans, drained and rinsed
  • 1 cup corn, fresh, frozen, or canned
  • 1 can diced tomatoes
  • 1 1/2 cups vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 3/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • Optional toppings: avocado, salsa, Greek yogurt, shredded cheese, green onions, jalapeños, tortilla chips, lime wedges

Instructions

  1. Rinse quinoa under cold water and drain well.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion and bell pepper. Cook for 3 to 4 minutes.
  4. Add garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir for 30 seconds.
  5. Add quinoa, black beans, corn, diced tomatoes, and vegetable broth.
  6. Bring to a gentle boil.
  7. Reduce heat to low, cover, and simmer for 18 to 22 minutes.
  8. Turn off heat and let the pot rest covered for 5 minutes.
  9. Fluff with a fork.
  10. Stir in lime juice and cilantro.
  11. Serve warm with avocado, salsa, yogurt, cheese, green onions, jalapeños, tortilla chips, or lime wedges.

Notes

For a spicier version, add diced jalapeños, cayenne pepper, or hot sauce. For extra protein, add another can of beans, tofu crumbles, chicken, or turkey taco meat.
